Light and Fluffy CBD Pancake

 

Ingredients

 

  • 150g self-raising flour

  • ½ tsp baking powder

  • 1 large egg or vegan egg replacement

  • 150ml milk of choice

  • ½ tbsp maple syrup

  • 1-2 tbsp butter or vegan butter

  • 2ml Bright Days CBD Oil Drops

 

Cook Time

 

  • Prep time: 15 minutes.

  • Cook time: Each batch of pancakes takes approximately 3-5 minutes to cook (2-3 minutes per side).

 

Method

 

  1. In a large mixing bowl, combine the flour, baking powder, and a pinch of salt. Whisk to aerate the flour.

  2. Create a well in the center of the flour mixture. Add the egg, milk, maple syrup, and CBD oil. Whisk until a thick, smooth batter forms.

  3. Heat a non-stick frying pan over medium heat. Add 1 tablespoon of butter and brush it around the pan, pouring off any excess so only a thin film remains.

  4. Add 2-3 tablespoons of batter to the pan to form small-to-medium pancakes (about 10cm wide). Cook in batches to prevent the pancakes from sticking together.

  5. Fry for 2-3 minutes, or until bubbles appear on the surface and the sides look set. Flip the pancakes and cook for another 1-2 minutes until they are golden on both sides.

  6. Keep the cooked pancakes warm in a low oven or on a warm plate while you cook the rest of the batter, repeating with the remaining butter as needed.

  7. Serve in stacks with maple syrup and a knob of butter.
